We are manufacturing Vertical Non-ferrous Billet Casting Machine and using manual flow control valve we want to pre-define the speed & Stroke of our cylinder. Is it possible through servo control, are there any servo controled flow control valves available which can control the flow rate through inputs from electic panel?

I think you are meaning hydraulic proportional valves. There are lot of manufacturers in this area, ex. Rexroth, Burkert, Vickers...

You can control your valves using standard process control ways, like 0-10V, 4-20mA and so on.
