help with field sensor basic design questions

I am of the first time designing a series field devices (as accessories of pipe/valve system we manufacture ) I have some basic questions (hope not too idiot) seeking your help.

1) As a commercialized switch device, eg, for detecting valve opening (not for detecting close). Is its output most often seen or preferred by control engineer as 1) SPST NO, 2) SPSP NC, or 3) SPDT, if connecting to PLC or DCS?

2) For a 2-conductor current loop device sending on/off signal (24VDC, 0 and 20mA max), using a 1ft cable with M12 connector, should the 1ft cable shield (drain conductor) be terminated to one of the M12 pin, or taped and not connected to the connector?

3) I am also in conceptual design of one 2-wire and one 3-wire transmitter, can I both use 4-pin M12 connector since it greatly simplifies supply chain?

4) Could you please recommend one book or website for design of field sensor devices (I am more interested in mechanical and electrical typical configurations and certain regulations. )
