how does magnetic oil level gauge in transformer operates? what does that 35 deg c in that gauge indicates?
 
Oil is a fluid that "expands" and "contracts" with changes in temperature. If you take an oil level reading in a vessel or container at a particular oil temperature, and then take another reading at a different oil temperature the level will appear to have changed, even if no oil was added or deleted. So, that reading on the gauge means that the indicated level is accurate at an oil temperature of 35 deg C.

Large oil tanks have temperature correction charts, to accurately reference the oil level inside the tank regardless of oil temperature.

As for the way the gauge on your transformer works, you need to find the manufacturer's instruction manual for the gauge. In general, magnetic gauges operate by having a magnet or a magnetic object that rises and falls with the oil level in the vessel or container, and a magnetic object or a magnet in a separate tube rises and falls with the rising and falling of the floating element in the oil. This way there is "isolation" between the indicator mechanism and the float mechanism.
