proprietary serial - modbus tcp

I have an engine monitoring unit which provides a serial connection for aftermarket control and monitoring. i have from the factory all the relevent information regarding reading the data. What i need to do is process it on a small cpu and make the information available on the Modbus TCP network for all clients (HMIs) to access. I have the hardware side sorted, mainly needing advice on software and code, etc.
