I am currently searching for a differential pressure sensor that needs to be installed underwater for an indefinate period of time. I would like to accurately read to 0.10" of H2O but need a sensor that could withstand upto a 300 PSI spike (water hammer)or a good way to protect the sensor from such a spike and not need to reset or repair such a protection device.

There are any number of sensors that will work, but the most durable and reliable would be Paroscientific's. After that, you have Wika, Druck, Instrumentation Northwest, Ametek, and quite a few more.
