I need to know, from where to get some basic knowledge about sensors (flow, temperature, level), how they work, etc...

Is there any site available, from here I can read all this information, or does someone have some documents that can send me??

I suggest the follwoing book as a start:

"Introduction to Control System Technology" by Robert N. Bateson. It is published by Prentice Hall.

I am sure there are better books depending on your applications.
