I am looking for any information on what the information available is inside these drives. I am trying to repair one and make it run on my test fixture and would like to see how to retrieve the information that has not been accessed via the HMI the application uses.

With the models I have used, there was no information available from the drive other than what the built-in text menu system put out. The serial port was intended as a programming interface, not for control by a PLC or PC. The
drive could be controlled and monitored by a PLC via digital I/O lines.

According to my notes, the serial port was 9600 baud, 8 data bits, 1 stop bit, no parity. Pin 2 = TX, pin 3 = RX, pin 7 = GND.

You should be able to power the system up and issue commands via a terminal emulator using the menu system.
