What is the norm for setting the charger output for a 125 vdc ups system

 

charger voltage output is generally established to provide float charging for the batteries associated with the UPS. check the battery manufacturer's recommendations

 

If the system is bootleg using automotive lead acid batteries you may use 135-155v. The lower end here is desirable since it keeps the electrolyte from evaporating quickly.
